Abstract:

Foods transmit 32 important diseases that result in 600 million illnesses and 420,000 deaths annually world-wide. Implementing proper safety measures could protects consumers from these preventable diseases. Developing nations need every effort to improve food safety for the health benefits to their citizens and for boosting their exports. One of the most critical component of any successful food safety program is the rapid pathogen detection through accurate analysis and reporting. Many disease outbreaks and product recalls could have averted using credible analyses and reporting. Furthermore, disease tracking technology has advanced so that the link between disease and suspect food could be determined rapidly and accurately. The 2015 listeriosis due to consumption of ice-cream and the 2016 infection with hepatitis A virus in strawberries are examples of recent disease out breaks where modern detection and tracking of pathogens were implemented. Developing countries should keep up with these advanced to protect their tourism and exports. Diagnosing food safety breaches through analyses should be coupled with measures to prevent these problems in the first place. This requires applying proper mitigation strategies and control to ensure food safety throughout the whole supply chain. Water probably is the most critical risk factor in food production and processing. Beginning with crop irrigation and concluding with a final rinse before consumption, water is a major contributor to both food contamination and decontamination. It is arguable that the cost of ensuring food safety isn’t much more than the toll associated with consumption of unsafe food. Cost-effective ways to overcome food safety challenges will be discussed in this presentation
